Can one item have more than one tax or discount?
No. Each item uses one tax and one discount. For a cut on the whole transaction, create a Deduction in Catalog > Discounts & deductions and pick it at checkout.
Do I have to add suppliers?
No, suppliers are optional. But if you pick a supplier when you add stock, you can see the total purchases and delivery history per supplier.
